Petrale is typically rarely found for purchase on Vancouver Island. Revered by chefs for its similar flake and texture to halibut, Petrale Sole has a slightly sweeter and nuttier flavour. It is also more forgiving to cook.
One method we love: Coat with herbed butter and place on baking sheet. Bake at 375F for 8 minutes, and broil for 2 more.
