2LB boxes of whole frozen herring. Caught off Quadra Island, BC from Nov 2020-Jan 2021.
7.25 - 9" whole herring are hand brailed and hand packed, specifically not seined, to maintain pristine condition with minimal scale loss. 10-15 pieces per box.
Fished annually north of our Quadra Island location from November to February with minimal feed conditions, herring are ponded then transported in small loads in quick boats to our plant. Promptly processed within 15 minutes for maximum freshness.
Serving suggestion: Pickled with Sweet & Spicy Mustard
Pickled herring:
454g herring
400ml water
200ml white vinegar
20g salt
20g sugar
- Remove head and guts and skin. Rinse and pat dry.
- Mix sugar, salt, vinegar and water together until dissolved.
- Add herring and put in fridge for 6 hours, stirring every 2 hours so it pickles evenly.
- Drain in a colander. Eat with sweet and spicy mustard (recipe below).
Sweet and Spicy Mustard:
3Tbs grainy mustard
3Tbs brown sugar
2Tbs red or white wine vinegar
150ml neutral oil
Salt and Pepper to taste
1 bunch fresh dill, chopped
Add everything to a bowl except the oil and dill.
- Slowly add the oil while stirring until it's thick.
- Add the dill and stir.
